Ingredients

Marinade

  • 3/4 cup soy sauce less-sodium
  • 1/2 cup sugar cane vinegar
  • 4 cloves garlic minced
  • 1 bay leaf
  • 1 tsp ground peppercorn
  • 1 pinch salt
  • 6 chicken wings or drumettes

Adobo Glaze

  • 1 tsp olive oil
  • 4 cloves garlic minced
  • 2 bay leaves
  • 1 tsp ground peppercorn
  • 1 cup soy sauce less-sodium
  • 3/4 cup sugar cane vinegar
  • 1/2 cup light brown sugar
  • 2 tsp ketchup
  • 2 tsp honey
  • 1 tsp cayenne pepper
  • 1 tsp crushed red pepper
  • 1 tsp worcestershire sauce
  • 3 guajillo chili peppers or chipotle peppers
  • 1 pinch salt
  • cornstarch slurry mix 2 tbsp cornstach to 1 tsp water
  • 1/4 cup water
  • vegetable oil for frying

Instructions

Marinade

  • Combine soy sauce, sugar cane vinegar, garlic, bay leaf, ground peppercorn and salt in a mixing bowl or container
  • Add chicken and turn to coat
  • Cover with plastic wrap and refrigerate overnight

Adobo Glaze

  • In a saucepan over medium heat, heat olive oil and then saute garlic, bay leaves, and ground peppercorn until the garlic is golden brown
  • Add the soy sauce, sugar cane vinegar, brown sugar, ketchup, honey, cayenne pepper, crushed red pepper, worcestershire, guajillo pepper and pinch of salt
  • Cook for 15 to 20 minutes
  • Mix the cornstarch with water to make a slurry (start off with 2 tbsp cornstarch/1 tsp water) and add to glaze
  • Continue cooking until glaze thickens
  • Cool down and strain

Cooking

  • Preheat the oven to 375 degrees
  • Take the marinated chicken and lay them on a sheet pan and par bake for 10-12 minutes
  • Heat vegetable oil in a deep fryer to 375 degrees
  • Take the par-baked wings and deep fry for 5 to 6 minutes
  • Toss the deep fried wings with 3 ounces of the adobo glaze
