Ingredients

  • 3 eggs
  • 1 cup vegetable oil
  • 1 tbsp vanilla extract
  • 2 cups zucchini grated
  • 2 cups flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • 1 tsp nutmeg
  • 1 tbsp cinnamon
  • 1 cup raisins
  • 1 cup nuts chopped

Instructions

  • Beat eggs until light and fluffy
  • Add sugar and oil; continue beating until smooth
  • Add vanilla extract and zucchini; stir to mix
  • Sift together flour, baking soda, baking powder, cinnamon, and nutmeg; add to creamed mixture
  • Stir in raisins and nuts
  • Divide batter between two greased 8×4" loaf pans
  • Bake at 350 degrees for 1 hour or until toothpick inserted in center is clean.
