Ingredients

Sauce

  • 2 tbsp olive oil
  • 2 tbsp balsamic vinegar
  • 2 cloves garlic grated
  • 1 tsp salt
  • ground pepper to taste

Vegetables

  • 1 lb zucchini sliced lengthwise
  • 1 lb bell peppers sliced wide strips
  • 1 large white onion sliced 1/2" round slices
  • 1/3 c parsley or basil finely chopped

Instructions

Sauce

  • Whisk together ingredients and set aside

Vegetables

  • Preheat grill with cooking spray on low heat
  • Add vegetables to grill and cover for 12 minutes; flipping once to get grill marks on both sides
  • Transfer vegetables to large bowl and pour sauce over and sprinkle with parlsey or basil
