Ingredients

Onions

  • 1/4 c all purpose flour gluten free
  • butter or gluten free cooking spray for greasing
  • canola oil for frying
  • 1/4 c gluten free rice cereal crushed
  • 1 tsp salt
  • 1 large onion powder slicked thinly into rings

Green Beans

  • salt
  • 1 lb green beans trimmed
  • 2 tbsp unsalted butter
  • 8 oz fresh mushroom sliced
  • pepper
  • 3/4 c chicken broth
  • 3/4 c heavy cream
  • 1/2 tsp chile powder

Instructions

Onions

  • In a large pot, bring about 1 inch oil to 350 degrees over medium-high heat and line a plate with paper towels
  • In a small bowl, whisk together cereal crumbs, salt, and flour
  • Add the sliced onions rings and toss to coat evenly, working in batches, fry until golden brown and lightly crisped, 3 to 5 minutes

Green beans

  • Prepare a large bowl of ice water
  • Bring a medium saucepan of salted water to a boil and add green beans
  • Cook until crisp-tender, ~2 minutes then immediately strain and plunge into the ice water

Cooking

  • Preheat the oven to 375 degrees and grease a 8×8 inch baking dish with butter or cooking spray
  • In a large skillet, melt the butter over medium-high heat and add mushrooms, cooking until liquid has evaporate (stirring often)
  • Season with salt/pepper, then sprinkle 2 tbsp flour and cook, ~1 minute, stirring often
  • Stir in broth and heavy cream and bring to a simmer and cook until thickened, ~4 minutes
  • Stir in green beans and season with chile powder and salt/pepper
  • Transfer to a the prepared baking dish and top with the fried onion rings
  • Bake until golden and bubbling, ~30 minutes
