Turkey Gravy

Ingredients
Stock
- giblets neck from turkey
- 8 c water
- 2 stalks celery
- 2 carrots
- 1 bunch parsley
- 1 bunch thyme
- 1 bay leaf
- 1/2 tsp black peppercorn
- 1 yellow onion 1/8 sectioned
Rue
- madeira wine
- 1/4 c fat from turkey or butter
- 3 tbsp all purpose flour gluten free
- 3 c stock
- 2 tsp rosemary
- salt to taste
- pepper to taste
Instructions
Stock
- Add all ingredients to stock pot and bring to boil
- Simmer for 1 1/2 hours and add salt to taste
- Put stock through strainer
Rue
- Drain all liquids off pan from turkey (fat separator)
- Add madeira wine to deglaze pan and cook until 3/4 reduce
- Add flour until slightly brown
- Add 3 cups of stock
- Add rosemary (and/or other flavorable spices) and salt/pepper to taste
- Bring to boil and add additional drippings and stock to bring to consistency
- Reduce and cook for ~15 minutes
