Ingredients

Stock

  • giblets neck from turkey
  • 8 c water
  • 2 stalks celery
  • 2 carrots
  • 1 bunch parsley
  • 1 bunch thyme
  • 1 bay leaf
  • 1/2 tsp black peppercorn
  • 1 yellow onion 1/8 sectioned

Rue

  • madeira wine
  • 1/4 c fat from turkey or butter
  • 3 tbsp all purpose flour gluten free
  • 3 c stock
  • 2 tsp rosemary
  • salt to taste
  • pepper to taste

Instructions

Stock

  • Add all ingredients to stock pot and bring to boil
  • Simmer for 1 1/2 hours and add salt to taste
  • Put stock through strainer

Rue

  • Drain all liquids off pan from turkey (fat separator)
  • Add madeira wine to deglaze pan and cook until 3/4 reduce
  • Add flour until slightly brown
  • Add 3 cups of stock
  • Add rosemary (and/or other flavorable spices) and salt/pepper to taste
  • Bring to boil and add additional drippings and stock to bring to consistency
  • Reduce and cook for ~15 minutes
