  • 1 1/2 c peanut butter
  • 1 c butter softened
  • 1/2 tsp vanilla extract
  • 6 c confectioner's sugar
  • 4 c semisweet chocolate chips
  • toothpicks


  • In a large bowl, mix together peanut butter, vanilla extract, butter, and confectioner's sugar (dough will look dry)
  • Roll into 1 inch balls and place on waxed paper-lined cookie sheet
  • Press 1 toothpick into the top of each ball and chill in the freezer for 30 minutes
  • Melt chocolate chips in a double boiler, stirring frequently until smooth
  • Dip frozen peanut butter balls in chocolate by holding toothpick, leaving a small portion of peanut butter exposed (to make it look like a buckeye)
  • Place balls back on cookie sheet and refrigerate until ready to serve
